Who doesn’t love omelettes? This version of the beloved cencaluk omelette pumps up the brine, making it perfect for a quick and satisfying lunch. Add more or less cencaluk, shallots, and cili padi as you wish to make it your own—though we recommend a little more cencaluk for a savoury bite.

Who doesn’t love omelettes? This version of the beloved cencaluk omelette pumps up the brine, making it perfect for a quick and satisfying lunch. Add more or less cencaluk, shallots, and cili padi as you wish to make it your own—though we recommend a little more cencaluk for a savoury bite.

3 eggs

2 tbsp cencaluk

4 shallots, peeled and thinly sliced

3 cili padi, minced (or more to taste)

2 tbsp cooking oil

1 lime, sliced in half

  1. Crack the eggs into a bowl and beat well. Add in the cencaluk, sliced shallots, and cili padi. Mix again to combine.
  2. In a medium wok or frying pan, heat the cooking oil over medium flame. Once the oil begins to shimmer, pour in the egg mixture and let it cook, undisturbed, for about 3-5 minutes. Gently and quickly flip the mixture so the uncooked side is touching the bottom of the pan and fry until cooked through, about 2-3 minutes more.
  3. Slide the omelette onto a plate and squeeze lime over the top. Serve with hot rice.
