Chicken in soy sauce

This is one of Dill’s favorite dishes, so much so that her mother taught her the recipe so she could make it herself at home. Everything comes together in one pot and it makes its own gravy. It’s so easy that you should also teach your own kids to make this!

1 large yellow onion, peeled and thickly sliced

1″ ginger, peeled and thinly sliced

1 stalk fresh or dried red chilli

2 medium potatoes, peeled and cut into chunks

½ whole chicken, cut into medium sized pieces

6 tbsp salty soy sauce (we recommend Tamin brand)

1 tbsp oyster sauce

  1. Along the bottom of a medium-sized pot, arrange onion slices, ginger slices, chilli, and potato pieces. Then, arrange the chicken pieces on top of the cut vegetables. Pour over the soy sauce and oyster sauce. You don’t need to add water! Cover the pot and place on top of the stove.
  2. Turn the flame on to medium heat. Without stirring, let the ingredients cook for about 10 minutes. After 10 minutes, lift the lid and stir the ingredients together. Close the lid and cook for another 5 minutes, undisturbed. Check every 5 minutes; the dish is cooked once the chicken is cooked through.
  3. Serve with white rice and a dollop of ghee.

Tips

  • The onion, ginger, and chicken will release its own juices which will then be absorbed by the potatoes. You do not need to add any additional water to this dish.
